So today my teenage daughter got some bad news. She felt really down and I wanted to make her feel better, to take her mind off of it for a little while. I also had to come up with something to eat for supper since our plans had been changed and she was going to be home with me tonight. Driving home I was wracking my brain trying to figure out what I could cook since I hadn’t taken anything out to thaw. I started with bacon and eggs, but I wasn’t really in the mood for bacon and eggs.
Then it hit me!!! I had “stolen” some whole wheat egg noodles and cream of mushroom soup from my mother’s house the other night. Add that to two cans of tuna and BINGO – tuna casserole! Served on my grandmother’s china no less because I believe every day is special.
My favorite comfort food ever. I know, I know I blog about healthy food here, but as I tell everyone I work with, eating right is not about denying oneself. When you tell yourself that you “can’t” have something, then immediately your body and brain start craving it. All things in moderation (well most things anyway).
So I started the noodles boiling, opened 2 cans of tuna and mixed it with the soup, grated raw aged cheddar cheese from the farmer’s market, a little milk, and several spices. Popped it into a pre-heated 350 degree oven for 30 minutes and voilà – tuna casserole! She had 2 helpings and I think she is feeling a little better now.

PS – As for me, I started the meal with a big ole salad!
